4 eggs

1 ¼ cup oil

1 cup sugar

1 cup brown sugar

2 cups plain flour

2 teaspoons baking powder

2 teaspoons soda

½ teaspoon salt

2 teaspoons cinnamon

½ teaspoon nutmeg

½ cup chopped nuts

3 cups grated carrots

1 teaspoon vanilla

Beat sugars & oil together, add eggs. Sift dry ingredients together and gradually add to sugar mixture. Add carrots, nuts, & vanilla. Pour into 3 greased & floured 9" pans. Bake @ 325 degrees for 30 - 35 minutes. Cool. Ice with cream cheese icing. Keep refrigerated.
