House Made Syrup
2 cups water
1 cup packed brown sugar
1 cup sugar
2 teaspoons honey
1 teaspoon vanilla
In a sauce pan bring the two sugars and water to a boil. Cook and stir for 2 minutes. Remove from heat and stir in honey and vanilla.
Sweet Potato Waffles
2 cups sweet potatoes (peeled, cubed)
2 cups All purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 1/4 cup milk
1/4 cup packed brown sugar
2 Tablespoons honey
1/4 cup butter (melted)
Place prepared sweet potatoes in boiling water and cook until fork tender. Once cooked strain the water off, mash potatoes and set aside.
In a large bowl whisk flour, baking powder, and salt.
In another bowl combine potatoes, milk, brown sugar, butter, and honey. Once incorporated, stir the sweet potato mixture into the flour mix. Beat the eggs. Fold the eggs in 1/3 at a time. Batter will be thick.
Pour batter into a preheated, oiled waffle iron and cook for 4-6 minutes.
Amount of batter and cooking time will vary depending on your waffle iron.

Pound chicken thin and cut into strips. Soak strips in buttermilk.
Mix flour with salt and pepper to taste.
Take a chicken strip out of the buttermilk and dredge in flour. Submerge floured chicken strip back in buttermilk and coat with panko. repeat
Heat vegetable oil up to 350 degrees and cook a few minutes per side. Depending on the thickness of the chicken.
