4 lb Ground Chuck
Brown beef in a large heavy pot, drain and set aside in a colander.
2 TBS Extra Virgin Olive oil
2 or 3 Red or Yellow Onions (diced)
2 Red & Yellow Bell Peppers (diced)
2 TBS Minced Garlic
3 or 4 Canned Chipotle Chiles (diced)
3 or 4 Jalapeño Peppers (diced)
Heat oil in a separate pan. Sauté jalapeños, bell peppers and onions
'til slightly browned and softened. Add the garlic and sauté a minute or
so, then add the chipotle. Reduce heat, cover and simmer 5 minutes.
1/3 C. Ocho Oucho Spice Mix*
2 TBS. Kosher Salt & Course Pepper mix
Return beef to the sauté veggies. Add the spice mix, salt & pepper.
Heat stirring occasionally until the entire mixture starts to percolate.
Reduce heat, cover and simmer 10 minutes.
1 can Petite Diced Tomatoes (28oz)
Add tomatoes, stir thoroughly, cover and simmer 10 minutes.
2 TBS Light Brown Sugar
1 can Tomato Paste (6oz)
Add brown sugar and tomato paste stirring to dissolve thoroughly.
Cover and simmer another 5 minutes..
1/3 round Mexican Chocolate
Add the chocolate, stir to dissolve and simmer the Chile Joe until
the chocolate is completely dissolved. Let rest an hour or so and enjoy!
