Ingredients:

  • 12 eggs
  • 1 yellow bell pepper finely diced (you can also use a combination of yellow, green, and red)
  • 1/2 cup mayonnaise
  • 1 tablespoon diced hot cherry peppers
  • 1 teaspoon dry mustard
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

Hard boil eggs, peel and dice. Add all other ingredients and fold together to mix. Serve with fritos, crackers, as a sandwich, stuffed in a tomato, etc. Keep chilled and this will last up to five days.
