2 cups rice (long grained-Basmati pref)
1/4 cup Oil & 1.2 TBL Butter (For flavor)
1 carrot, small dice
1 onion, sliced
1 celery, diced
1 green pepper, diced
2 large tomatoes, chopped
2 -3 garlic cloves
1 Tsp Ground Ginger
1 Tbl ground paprika
2 Tbl cayenne, add more if you want it hotter
1 Tsp dried thyme
1 bay leaf
4 cups Chicken Broth (or 4 cups water with 2 chicken bouillion or 2Tbl Chicken base)
¼ C Frozen peas
Salt & Pepper
1/4 cupcilantro (to garnish) or 1/4 cupparsley (to garnish)
1. Heat Oil, add paprika, cayenne, onion, celery, green pepper, carrots, garlic and ginger. Cook until soft.
2. Then add tomato paste, tomatoes, bay leaf & thyme. Then add frozen veggies. . Add the rice next. Saute for another 2 minutes or so.
3. Add Stock/water with lid and cook until almost done on High heat (20-30 min) Turn down heat and Continue cooking until the rice is fully cooked and water is mostly gone.
