Farm fresh eggs
Preheat oven to 450 degrees.
Put however many eggs you would like to make in a pot with cold water (enough to completely cover the amount of eggs you are boiling).
Bring to a rapid boil and then immediately reduce heat to a simmering boil. Allow to cook for 10-12 minutes.
Pull eggs out of water and cool immediately by running cold water over them or submerging in a cold water bath.
After eggs have cooled enough to handle, peel the shells off. Take 3 ounces of ground sausage and make a flattened patty that covers the palm of your hand.
Place peeled egg in center of sausage patty and mold sausage around egg. Make sure that the sausage covers egg evenly and there are no gaps or it will crack during baking.
Chill the sausage egg balls until ready to bake or at least 30 minutes. Take the eggs out of the refrigerator and roll in breadcrumbs. Place in oven for 30 minutes. Serve with spicy brown mustard or maple syrup or both!
