Complete Breakfast Muffins
1/2 -1 piece bacon per person
10-12 boiled eggs, coarsely chopped
2 cups shredded cheddar cheese
1 cup good mayonnaise
1 heaping tablespoon Dijon mustard
1/2 teaspoon garlic powder
Worcestershire sauce to taste
1/2 - 1 English muffin per person
Fry bacon until about halfway done. Peel eggs and coarsely chop. Add mayonnaise, mustard, garlic powder and Worcestershire sauce. Stir gently to combine. Spread mixture generously on top and bottom half of the muffins. Top with 1/2 - 1 slice of bacon. Preheat oven on broil. Place filled muffin halves on a baking sheet. Place sheet on lower oven rack. Broil 3-4 minutes or until topping is warm and bacon is crisp.
