Ingredients for 4 servings
4 Marinated Boneless Skinless Chicken Breast (recipe below)
4 cups cooked Seasoned Rice
Lemon Butter (recipe below)
1/2 cup quartered Artichoke hearts
3 cups Fresh Spinach leaves
1/4 cup Sun Dried tomatoes
Grill 24 hour Marinaded Chicken Breast and set aside. Add lemon butter to a saute pan over medium heat, add sun dried tomatoes until softened then add spinach until wilted. Stir in Artichokes until warm.
Pour Mixture over Grilled Chicken and Seasoned Rice and Serve Hot.
1/4 cup vegetable oil
1/2 c. cold water
1 c. Italian dressing
1/2 c. dry white wine
2 T. minced garlic
diced white onion to taste
dash of garlic, rosemary, thyme and celery salt
1 c. Heavy Cream
Pinch each - salt, white pepper, garlic powder
2 oz butter
Juice of 1 lemon
Whisk together room temperature butter with cream. Add seasonings and whisk well, Juice the lemon and add slowly while whisking.
