4 4 oz. chicken breasts

1 T. Caribbean jerk seasoning

1/2 c. brown sugar

1/2 c. bell peppers

1/2 c. diced celery

1/2 c. diced onion

1/2 c. frozen corn

Minute rice (enough for 4 servings) cooked with 1 T. chicken base or substitute chicken broth for water

Mix jerk seasoning and brown sugar...toss in diced raw chicken. Saute in skillet until done. Serve over seasoned rice.

For rice:

Saute peppers, onions and celery. Add recommended amount of water or broth..bring to boil and then add chicken base (bouillon) and chicken and rice. Cook according to recommend time on package.( You can use your own broth or a packaged broth...due to high amounts of sodium in most, taste rice after cooking before adding more salt.) Make it spicier by adding green chilies or jerk seasoning to rice.
