Ingredients:

2 cups Mashed Potatoes

2 ea. Potatoes, Raw, Grated

3 ea. Eggs

¼ cup Milk

2 cups Flour

Method: Mix all ingredients together. Divide batter into four portions. If desired, place batter into large ring to form shape. Cook in cast iron skillet or non-stick pan over medium heat. Serve with Kerrygold Butter, Sweetwater Valley Farms Cheddar, Smoked Salmon & Cream Cheese Sauce, Irish Sausages w/ Sautéed Peppers, Onions & Mushrooms or whatever you like!

Cream Cheese Sauce

Ingredients:

½ cup Sour Cream

½ cup Cream Cheese

½ Tbl. Chives, Super Fine Dice

Method: Allow Cream Cheese to soften at room temperature. Mix Chives and Sour Cream together. Fold Chive Sour Cream into Cream Cheese until well mixed.

Serve with Smoked Salmon and garnish with non-pareil Capers.
