Cook grits of your choice, then pour into sheet pan to cool. (May cook grits with broth and cream cheese for extra richness)

Chill the grits so they are firm. When ready to prepare the dish, cut into squares and saute the grit cakes in some oil in a skillet until warm and slightly toasted. Remove to serving plate.

In another skillet, saute shrimp in a little garlic butter just until pink. When they are ready, add some chopped tomato and capers. Toss with the shrimp in the skillet, just until they are warm.

Pour over the toasted grit cake and serve.
