Pesto BLT: a simple sandwich to remind how great ingredients make great food. This sandwich is a quick assemblage of a few simple ingredients, which are deliciously local. First 3 slices Benton's smoked bacon, a tab of homemade lemon mayonnaise, 2 tab of basil pesto,and 3 slice of homegrown tomatoes, and your favorite bread....

Mayonnaise-- 3 egg yolks

1.5 cups blended oil

2 tab Dijon mustard

2 lemons

1 tab kosher salt

1 tab ground white pepper

In a food processor, add yolks and mustard and process on high speed , slowly incorporate oil to form mayo

Zest 2 lemons add to mix as well as remaining ingredients...pulse to blend

Pesto--- 2 cups fresh basil leaves

1 cup grated parmesean

3 tab garlic

1/2 cup pecan pieces

1 cup olive oil

Combine all ingredients and pulse
