Chef Gary makes calamari steak with a fresh, summery topping.

¼ cup olive oil

4 – 6 Calamari steaks

For the Calamari Seasonings:

Coriander Paprika

Cumin Salt

Curry Pepper

1. Combine all spices and mix until combined and brush calamari steak on both sides with olive oil and then dust both sides with spices.

2. Grill on both sides about one minute total or until slightly translucent. Remove and serve with Balsamic tomatoes.


For the Basil Balsamic Tomatoes:

1 cup virgin olive oil salt to taste
1.4 cup Balsamic vinegar black pepper to taste
2 cups chopped tomatoes ¼ crumbles feta cheese
2 tbsp. minced fresh basil 2 tsp. minced garlic
2 tbsp. minced fresh oregano

1. Combine all above ingredients except Feta and mix until combined and adjust salt and pepper then spoon over Calamari steaks and top with Feta cheese – enjoy!
