2-4 small zucchini, shredded

1 small onion, finely diced

3 eggs, beaten

1/2 cup sharp cheddar, shredded

1 cup half and half

2 cups all purpose flour

Salt and pepper to taste

Smidgen of garlic powder

2 tablespoons dried parsley

Shortening for frying (I used solid Crisco)

In a medium bowl, whisk together the dry ingredients, include seasonings. In a small bowl, whisk together eggs and half and half. Gently stir egg mixture into the dry ingredients. Add zucchini, onions and cheese. Stir only until combined. In a large, heavy skillet, heat shortening till the surface shimmers. Drop two tablespoons at a time of the mixture into the skillet. Fry until golden, turn and fry the second side until golden. Drain on a wire rack.
