How to make shrimp potato salad from the Shrimp Dock

Ingredients:

  • 5 lbs diced red potatoes
  • 2 1/2 lb 31/35 count peeled shrimp
  • 12 diced boil eggs
  • 1 bunch green chopped onions
  • 1 cup chopped celery
  • 1 cup sweet relish
  • 1/4 cup parsley
  • 1/4 teaspoon salt
  • 1 pint mayonnaise

Directions:

  1. Boil water
  2. Add diced red potatoes, cook 10 minutes
  3. After turning off stove, throw ice in the pot to cool off potatoes
  4. In separate pot boil more water
  5. Add peeled shrimp, cook 2 1/2 minutes
  6. When cooked and cool cut shrimp in half if you feel they are too big
  7. Combine all other ingredients
