3/4 cup mayonnaise

3 ounces roasted red bell peppers, drained and chopped

1 teaspoon finely grated onion

1 teaspoon coarsely ground mustard

1/4 teaspoon cayenne pepper

8-10 ounces shredded white cheddar cheese

Black pepper to taste

In a medium bowl, stir together all the ingredients. Serve with your favorite crackers. Store, refrigerated, up to four days.
