Ingredients:

  • 1 package of 6" corn tortillas
  • 1 lb. smoked chicken, pulled& fully cooked
  • ½ large red onion, minced
  • 2 cloves garlic, minced
  • ½ can of Chipotles in adobo sauce (7oz. can)
  • 2 tbsp. butter¼ cup of white wine
  • 2 cups white cabbage
  • ½ cucumber, julienne
  • ½ bunch of cilantro, chopped finely
  • ¼ cup apple cider vinegar
  • ¼ cup vegetable oil
  • Salt
  • Pepper

Directions:

  1. Combine butter, white wine, chipotles, garlic, and red onion in a pot to create the adobo sauce.
  2. Place pot on stove top on high for 5 minutes while stirring ingredients.
  3. After 5 minutes, add the pre-cooked, pulled chicken into the pot and reduce heat.
  4. Simmer chicken mixture for 45 minutes to allow the chicken to absorb the flavors from the sauce.
  5. While chicken mixture is simmering, begin the slaw.
  6. Combine the cabbage, cucumber and cilantro in a bowl.
  7. Add the apple cider vinegar and oil for the dressing, with a pinch of salt and pepper for taste.
  8. Toss ingredients so the vegetables are fully covered in the dressing.
  9. Let the slaw sit in the fridge for 1 hour.
  10. Place tortillas in a pan on low heat to warm.
  11. Take warm tortilla and add adobo chicken.
  12. Top with sweet slaw and eat!
