Salad:

Cleaned kale in bite size pieces

Pickled Red Onions recipe:

1 Red Onion Julienned

1 cup Red Wine Vinegar

1/4 cup sugar

1/8 cup salt

Mix all together and marinate a couple hours.

Dressing Recipe:

6 anchovies

3 cloves garlic

Toasted Pecans

Juice and zest of 6 lemons

2 1/2 cups olive oil

Add first 4 ingredients to blender and blend. Slowly drizzle in olive oil while blender is running until all ingredients are blended together to form an emulsion.

Toss kale and dressing in a bowl and place dressed salad on a plate, top with pickled red onions.
