3 cups shredded (raw) sweet potato

1-1/2 cups purple cabbage, shredded

1-1/2 cups green cabbage, shredded

1 tsp. finely minced jalapeno

1/2 cucumber, cut into matchsticks

Dressing:

1/4 cup oil (corn, canola, etc.)

1/4 cup olive oil

1 tsp. apple cider vinegar

1 tsp. lime juice

1 T. brown sugar (or to taste)

1-2 T. Sweet & Salty seasoning

Place all slaw ingredients in a large bowl. Whisk dressing ingredients together and add to vegetable mixture.
