As fall weather brings us cooler days, a good hearty soup is hard to beat! Smoked sausage mixes flavors with cheese tortellini and tender baby spinach. Serves 6
1 package Kroger Smoked Sausage Links or 1 lb. of your favorite bratwurst, kielbasa, or sausage (smoked is best)
1-2 lbs. cheese tortellini (fresh is best from the refrigerated pasta section)
3-4 Tablespoons olive oil
3 (14 oz.) cans low-fat low-sodium chicken broth
1 (15 oz.) can diced tomatoes
6 oz. baby spinach leaves
2 Tablespoons minced garlic
1 teaspoon paprika
1 Tablespoon unsalted butter
Shredded parmesan cheese to top soup
Sauté smoked sausage and slice into bite sized pieces and remove from pan.
Heat olive oil and sauté garlic for a minute and add broth and bring to broil. You may add ½ cup of white wine here if desired for extra flavor.
After bringing to a boil and cooking for a few minutes, add tortellini. Cook for another 3-4 minutes, until tortellini begins to float, and add tomatoes and spinach.
Cook for another 2 minutes and add sliced sausage, paprika, and butter.
Make sure sausage is heated again and serve.
Top with parmesan and serve with crusty bread to scoop out the last drops in the bowl.
