1 T. Olive Oil

1 Cup Diced Onion

1/2 Cup Diced Celery

1/2 Cup Diced Carrot

1 LB. Sweet Italian Sausage

1 T. Minced Garlic

2 50 oz. cans Chicken Stock

2 Cups Crushed Tomato in Puree

1 LB. Lentils (rinsed and picked through)

1 T. Italian Seasoning

2 Bay Leaves

1 T. Fennel Seed

Salt and Pepper to taste

  • In a heavy stock pot, sauté sausage, onion, celery and carrot in olive oil until sausage is browned and veggies are tender.
  • Add garlic and cook 5 minutes.
  • Add all other ingredients and bring to a boil.
  • Skim Fat.
  • Reduce heat and simmer 45 minutes or until lentils are tender.
  • Remove bay leaf and serve with crusty bread.
