Butternut Squash Toast


Butternut squash

olive oil or coconut oil

toppings of your choice


Slice squash into 1/2 inch thick slices. Lightly cover in oil. Bake at 350 for 25-30 minutes. Add toppings.

Suggested topping combinations:

strawberries and cream cheese

avocado and tomatoes

almond butter and banana

mozzarella, sun dried tomatoes and pine nuts
