Chai Apple Turnovers

Apple turnovers feel fancy, but they are easy to make. With fall in full swing, the flavors of spiced chai shine through in this chai apple turnover recipe.
1 Sheet of Puff Pastry
1/4 cup unsalted butter
4 & 1/2 teaspoons all-purpose flour
2 tablespoons Chai Concentrate (The Chai Box)
1/4 cup white sugar
1/4 cup packed brown sugar
1/2 Tsp ground cardamom
1/4 tsp ground ginger
2 C small diced peeled and cored apples.
1 beaten egg
Sugar for sprinkling
Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, spices and stir constantly until the texture is similar to thick caramel.
Reserve 1 T for the icing.
Preheat the oven to 400 degrees.
Add 2 Cups of prepared apples to the sugar mixture in the pot. Stir until apples are covered in mixture.
Roll out the puff pastry and cut into 6 squares
Place apples on one corner of each piece. Distribute evenly among all the pieces of dough.
Fold one corner over to form a triangle. Use a fork to press the edges together.
Brush with egg and sprinkle with sugar.
Bake for 18-20 minutes, checking for a golden brown color.
Take out of the oven and let cook for 5 minutes.
Drizzle with Chai icing. (See recipe Below)
1 T reserved sugar mixture
2 T Chai concentrate
1 T heavy Cream
1 Cup powdered sugar
Pour 2 T of chai concentrate into the reserved sugar mixture, add heavy cream. Stir to make it as smooth as possible.
Add 1 C powdered sugar. Stir til smooth.
Makes 6 servings.
