KNOXVILLE, Tennessee — Bacon Infused Pimento Cheese Burger

1 Lb. Ground Beef (80/20 or 75/25)
1/4 Lb. Bacon, Uncooked
1/4 Lb. Thinly Sliced or Shaved Red Onion
3 Potato Buns or Ciabatta Buns
1/4 Lb. Pimento Cheese
Bread and Butter Pickles
Salt and Pepper
Note: If you like your burgers medium-rare, precook the bacon until just tender. Chop bacon and reserve drippings.
In a large bowl combine ground beef, bacon, salt and pepper. Mix well by hand.
Patty and shape beef mixture into 1/3 pound patties.
Heat skillet, griddle or grill on high heat, to develop a nice crust on the outside of the burger.
Place burgers on the cooking surface. (If you're cooking on a griddle or in a skillet, lightly toast buns in the drippings)
Note: Turn burgers just once, don't play with them. After you flip the burgers, add the thinly sliced onions on top of cooked side.
Top with Pimento Cheese and allow it to melt slowly.
Remove burger from the heat, add bread, butter pickles and sliced tomato. Enjoy!
