Camille's Energy Bites

No Bake Energy Bites
1 cup (dry) oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seeds
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey or agave nectar
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.*
Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls.

Brownie Energy Bites

24 almonds
12-16 Medjool dates, pitted and roughly cut
2/3 cup almond butter
1/3 cup unsweetened cocoa
2 tablespoons water
1 teaspoon vanilla
1/4 teaspoon himalayan salt
1/2 cup chopped pistachios

Pulse dates in food processor to make a paste. Add almond butter, cocoa, water, vanilla and salt. Process until well-combined. Roll a ball of the mixture around an almond. Roll in chopped pistachios. Store in the fridge in an air-tight container for up to one week. They also freeze well.

Matcha Green Tea Energy Bites

1 cup shredded coconut, unsweetened
4 Tbsp almond flour
2 Tbsp maple syrup, more or less to taste
1 Tbsp coconut oil
1 Tbsp matcha green tea

Blend everything together in a food processor. Shape into 1-inch balls and enjoy!
