Caramel Praline Sheet Cake

KNOXVILLE, Tennessee — Caramel Praline Sheet Cake

Praline Ingredients:

1 1/2 cups chopped pecans

3/4 cup brown sugar

Cake Ingredients:

1/2 cup butter

1 cup water

1/2 cup shortening

2 cups brown sugar

1/2 cup buttermilk

1/2 teaspoon baking soda

2 eggs

1 teaspoon vanilla

2 cups plain flour

Icing Ingredients:

6 tablespoons butter

1/2 cup heavy cream

1 cup brown sugar

2 cups powdered sugar

2 teaspoons vanilla

Praline Directions:

Place pecans in a skillet over medium heat.  Heat for 2 - 3 minutes and then add the brown sugar.  Stir until sugar is melted and pecans are coated.  Turn out onto a piece of wax paper to cool.  

Cake Directions:

Heat butter, water, & shortening in a kettle until it comes to a boil.  Pour into a bowl and add the brown sugar stirring until the sugar is dissolved.  Add the buttermilk, baking soda, eggs, & vanilla in that order stirring well after each addition.  Add flour and stir until smooth.  Pour into a 15 x 10 greased pan.  Bake at 400 degrees for 20 minutes.  Let cool and then ice.

Icing Directions:

While cake is cooling combine butter, cream, & brown sugar in a kettle and cook over medium heat until mixture begins to boil.  Remove from heat and whisk in the powdered sugar and vanilla.  Pour over cake and sprinkle the praline pecans on top.  Enjoy!
