Cashew White Chocolate and Caramel Sea Salt Canoli

3 cups thick ricotta cheese

1 cup powdered sugar

1 tablespoon vanilla extract

1/3 cup caramel

3/4 cup cashews

3/4 cup white chocolate chips

2 teaspoons sea salt

8 large canoli shells

In a large bowl combine ricotta cheese, powdered sugar, vanilla, caramel, sea salt, white chocolate and cashews then mix gently with a large spoon until just combined. Fill each canoli shell with filling and garnish with warm caramel, chopped cashews and powdered sugar.
