Chive Blossom Butter

1 qt. heavy cream, well chilled

Dash of salt

Well-chilled mixing bowl

Add cream to your well-chilled mixing bowl. If using a stand mixer, chill that mixing bowl. Add the dash of salt. Using the whisk attachment begin mixing on low, increasing the speed as it starts to get thicker. Eventually, the butter will become separated from the milk and you can gather it up into a lump. The mixing process takes about 7-8 minutes.

Discard the milk. Finely chop the chive blossoms, or any other fresh herb, and mix into the butter with a fork. Form into a log, wrap in plastic wrap and store in the fridge. Great on bread, topping a steak, etc.
