Cake:
3 cups plain flour
3 cups sugar
1 ½ cups cocoa powder
1 Tbsp. Baking Soda
1 ½ tsp. baking powder
1 tsp salt
4 eggs
1 ½ cups buttermilk
½ cups vegetable oil
1 tsp vanilla
½ tsp peppermint extract
1 ½ cups hot water
Mix all dry ingredients.
Add all wet ingredients except for water. Stir together until combined, then stir in the hot water.
Divide into 3 pans (9” pans)
Bake at 350 degrees for 28-30 minutes
Icing:
2 sticks soft butter
2 boxes powdered sugar
2-3 Tbsp milk
½ tsp salt
½ tsp vanilla
¼ tsp peppermint extract
Cream butter. Add sugar. Carefully add milk. Add salt & flavorings.
