4 green tomatoes sliced thin

1 red onion sliced thin

1 ear of corn roasted

olive oil

sugar

apple cider vinegar

fresh parsley

salt and pepper

Combine tomatoes, onion and corn. In a small bowl mix olive oil, sugar, vinegar and salt and pepper. Gently stir into the tomato mixture. Season with additional salt and pepper if needed. Refrigerate.
