In the Kitchen: Fresh Berry Cheesecake Salad

Kim Wilcox from It's All So Yummy Cafe whipped up this special treat that's perfect for summer family gatherings!

Ingredients:

1 8oz pkg of cream cheese.

1 3.4 oz of instant cheesecake pudding

1 cup of Simply Pure Vanilla Coffee Creamer

2lbs of Strawberries sliced

3 bananas, cut and coined

2 tablespoons of fresh lemon juice

Recipe:

1. In a medium bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add dry cheesecake pudding mix. Beat until well combined.

2. With mixer running slowly add creamer to the cream cheese mix. Add it about a tablespoon at a time until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all the creamer has been added to the cream cheese. Whip until smooth.

3. In a large bowl, combine sliced strawberries, banana coins and lemon juice. Stir until all the fruit is coated with lemon juice. Add cheesecake mixture to fruit. Gently fold cheesecake mixture into fruit.

4. Chill until ready to serve. Enjoy!
