KNOXVILLE, Tenn. — Irish Pork Tacos
INGREDIENTS:
• 3 to 4lb bone-in pork shoulder
• 2 bottles Guinness
• 1 onion thinly sliced
• 6 peeled garlic cloves
• 2 tablespoons chili powder
• 1 tablespoon cumin
• 1 tablespoon paprika
• 1 teaspoon coriander
• 1 teaspoon onion powder
• 1 teaspoon cayenne pepper
• 1 teaspoon salt
• 1 teaspoon black pepper
• 2 tablespoons oil
• Taco shells
Possible Toppings
• Shredded cabbage
• Beer Cheese
• Sour Cream
• Fresh Cilantro
• Lime
• Jalapenos
• Avacado
DIRECTIONS:
• Preheat oven to 350 degrees.
• Combine all spices and rub all over the pork shoulder
• Heat oil in an ovenproof pan or dutch oven on the stove over medium heat
• When oil is heated place shoulder in pan and sear on all sides (will take approximately 4-5 minutes per side)
• While the pork is searing, thinly slice your onion and peel your garlic cloves. Smash the garlic cloves
• Pour both bottles of Guinness over the pork and add the onion and garlic
• Cover the pork with foil and place in a 350-degree oven
• Cook for approximately 4-5 hours or until the internal temperature reaches 150 degrees
• When the pork is cooked remove the meat from the bone and shred. Return the meat to the pan juices
• To serve, heat taco shell of your choice and place braised meat in the shell
• Note: Pairs well with shredded cabbage and beer cheese
