8 oz cream cheese
1/3 cup sugar
1 T. flour
1 egg
1/2 tsp. vanilla
1 cup chocolate chips
8-9 chocolate sandwich cookies crushed
1 T. sugar
1 T. melted butter
Preheat oven to 350
In a small bowl mix crushed chocolate sandwich cookies with 1 heaping tablespoon of sugar then add 1 tablespoon of melted butter and lightly press into 12 cupcake pan.
Melt 1 cup of semi-sweet chocolate chips.
Mix 8 oz cream cheese until smooth. Add 1/3 cup of sugar and beat until smooth. Mix 1 tablespoon of flour into the batter, mixing well. Add 1 egg until just blended. Add ½ teaspoon vanilla and the melted chocolate, stirring to incorporate.
Spoon carefully into wells in the pan. Bake for 20-25 minutes. Carefully run a knife around edges to loosen. Let cool for half hour then refrigerate for a few hours. Carefully remove from pan and serve.
