Mediterranean Seared Steelhead Trout

2-7oz fillets fresh Steelhead Trout

1/4 cup extra virgin olive oil

2 tablespoons coriander

2 tablespoons paprika

1 tablespoon curry powder

1 tablespoon cumin

1 teaspoon salt

1 teaspoon pepper

In a bowl combine salt, pepper, cumin, coriander, paprika and curry then mix to combine. Dredge each fillet in seasons and shake off excess seasons. In a large saucepan heat olive oil until hot then sauté Steelhead on all sides until golden then remove fillets from pan and save remaining oil.

For the sauce:

1/8 cup extra virgin olive oil

2 tablespoons lemon juice

3 tablespoons capers

1/4 cup thinly sliced red onion

1/3 cup diced fresh tomatoes

2 tablespoons minced fresh garlic

Salt and pepper to taste

In the same sauté pan from the fish add remaining olive oil, lemon, capers, onions, tomatoes and fresh garlic then sauté for about 1 minute then remove and add salt and pepper to taste. Pour on top of Steelhead and enjoy!
