Recipe Realities Kimchi Beef Sliders

Ingredients

1 lb lean ground beef

6 tablespoons finely chopped kimchi, divided

2 avocados, peeled and chopped

1 tablespoon lemon juice

1 English cucumber, thinly sliced on the diagonal

3 tablespoons Ponzu Sauce (Regular Soy will do fine as well), divided

3 tablespoons olive oil mayonnaise, divided

2 tsp sesame oil

1 tsp rice vinegar

Salt and pepper to taste

10-12 slider buns toasted (depends on how big you make your patties)

Directions

First, you want to focus on your toppings so the flavors will have time to marry while your burgers cook...

Toppings:

For the Kimchi Aioli, In a small bowl, stir together vinegar, 2 tbsp mayo, 2 tbsp kimchi, 1 tsp sesame oil, 1 tbsp ponzu sauce, and rice vinegar.

For your marinated cucumbers, mix sliced cucumbers with 1 tbsp ponzu sauce in another small bowl.

Your final topping with be your avocado mash. Just mash your chopped avocado in a small bowl and add your lemon juice, mixing well.

Sliders:

In a large bowl, combine beef, 4 tbsp kimchi, 1 tbsp mayonnaise, 1 tsp sesame oil and 1 tbsp Ponzu sauce.

Shape into small slider patties.

Preheat grill or grill pan and brush with canola or vegetable oil.

Add patties and cook, turning once about 3-4 minutes on each side.

Assembly:

Spread avocado mash on each bun bottom

Top with kimchi beef patty, then cucumber slices followed by a tbsp of Aioli and finally--the top bun.
