Yields 30 - 40 bite-sized snacks
Can be made ahead of time, served cool or room temperature. Easy to transport.
Ingredients:
15 - 20 Little tiny potatoes (select quarter sized, round potatoes, yellow, local if you can find them)
1 Century Harvest Farms Grass Fed Beef Salami stick
1 jar charred onion jam, or “Mustarda” from Century Harvest Farms.
Cream Cheese (softened, and whipped to spread, add a little fresh ground pepper to the cream cheese for zing)
Directions:
- Wash potatoes and bring to a boil on the stove with a pinch of salt. When they come to a boil, cover pot, remove from heat and let sit for an hour (if you have time).
- When potatoes have cooled slice in half. Place round side down on platter.
- Slice salami stick in thin quarter sized slices (the thinner these are sliced, the easier to chew).
- Smear a dab of cream cheese on each potato, top with salami, and dab of jam or mustarda.
