KNOXVILLE, Tenn. — Scottish Shortbread

Ingredients
1 cup butter- softened
1/2 cup granulated sugar
1 3/4 cup all purpose flour
1 teaspoon vanilla extract
Directions
Preheat oven 325 degrees
Lightly grease a 9 inch pie pan
Cream butter, sugar and vanilla in a mixing bowl til smooth.
Mix in flour
Roll or pat dough into a 1/2 thickness Shape into pie pan.
Score dough in 8-10 triangles and prick each triangle with a fork to ensure even cooking. Sprinkle with additional sugar.
Bake in 325 degree oven 25 min. Should have slightly browned edges.
