Ingredients:
1/2 cup boiled and diced potatoes
1/4 cup finely chopped onion
1/4 cup finely chopped tomatoes
1/4 cup grated carrots
1/4 cup diced green bell pepper
1/2 Tbs finely chopped green chili
1 Tbs finely chopped garlic
1 Tbs finely chopped cilantro
salt
2 Tbs lime juice
Whole wheat bread slices
butter
Directions:
Mix all the ingredients other than the butter and bread together. Set aside mixture. Heat skillet on medium heat. Spread 1 tsp of butter and coat skilled. Toast 1 slice of bread on the skillet. Top with prepared masala mixture. Spread on tsp butter on the masala and cook for 2-3 minutes. Flip toast on skillet and continue to cook for another 2-3 minutes. Garnish with grated cheese. Serve hot with ketchup or chutney.
