Metro Pizza's recipe for stuffed mushrooms

The original name for this recipe is Cappelle di Funghi Ripiene, but we'll stick with what we know: Stuffed Mushrooms. Jay with Metro Pizza shares their recipe for these delicious appetizers.

Knoxville, TENN. — Cappelle di Funghi Ripiene (Stuffed Mushrooms)

Ingredients:

1 lb mushrooms

1 cup Italian bread crumbs

1 egg

1/2 cup grated Romano cheese

4 oz chopped fresh parsley

1/4 cup of extra virgin olive oil

2 cloves garlic, minced

2 slices hard salami, minced

salt & pepper

Directions:

Clean mushrooms in a cold salt water bath.

Remove stems and hollow out center.

Preheat oven to 350.

Mix egg, cheese, parsley, olive oil, garlic, salami, salt, pepper and bread crumbs in a bowl.

Using a spatula, fill mushrooms with mixture.

On a cookie sheet, place foil down and add a little water and olive oil over the foil, so the mushrooms don't stick. Be careful not to get water into the mixture.

Place filled mushrooms on the foil and bake in oven for 30 minutes.
