Wok Chow's Tilapia Stir Fry

Chef Tim Joseph from Wok Chow shows Katie Roach how to make Tilapia Stir Fry.

Prepare Tilapia:
1 lb fresh tilapia cut into 1 x 1 inch pieces
Add one egg white
Pinch baking soda
Pinch white Pepper

Coat the tilapia

Dredge Tilapia in Potato and Cornstarch (50/50 mix or flour is fine)

Stir Fry Sauce:
Mix Together:
1/4 Tsp Chicken Base
2 oz soy sauce
1 Tbsp Oyster Sauce
1 Tbsp Mushroom Soy Sauce
1 oz Rice Wine
3 oz Water
1 Tbsp Sugar
1 Tbsp Chili Paste (for Spice can leave out)
1/4 Tsp Sesame Oil

Sautee veggies
Add sauce
Thicken with cornstarch and water slurry (50/50 mixture pre-mixed) until desired thickness is achieved
Add Tilapia
