3 tablespoons butter at room temperature
1/3 cup brown sugar firmly packed
1/4 cup sugar
1/2 cup pumpkin puree
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon soda
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
Lightly spray a cookie sheet with vegetable spray or line with parchment paper. Preheat oven to 375°. In a medium-size bowl, Beat butter and sugars until smooth. Add pumpkin, egg and vanilla. Mix well.
In a medium-size bowl, whisk together the dry ingredients. Slowly add to the creamed mixture. Blend well.
Drop by rounded tablespoons onto the prepared pan. Bake 10 minutes. Cool completely.
For the filling:
2/3 cup cream cheese at room temperature
1/4 cup heavy cream
1/4 cup powdered sugar
Place a spoonful of filling on the bottom of one cookie. Top with another cookie. Serve within Two hours.
