Pumpkin Overnight Oatmeal:

¼ cup old fashioned oats

¼ cup Greek yogurt or plain yogurt

¼ cup canned pumpkin

1 tsp. chia seeds

1-2 tsp maple syrup or honey

¼ tsp. pumpkin pie spice

¼ cup milk

Pumpkin Spice Granola:

2 cups rolled oats

1 cup pumpkin seeds

1 tsp. vanilla extract

1 tsp. pumpkin pie spice (or more to taste)

2 tbsp. melted coconut oil

2 tbsp. maple syrup or honey


For oatmeal:

In a small 1-2 cup container with a lid (I like 8 ounce mason jars), layer the oats, yogurt, pumpkin, chia seeds, maple syrup or honey and pumpkin pie spice. Stir gently to combine. Top with the milk and close tightly. Chill in the fridge overnight. When ready to serve, top with pumpkin spice granola or any granola of your choice or roasted pumpkin seeds.

For granola:

Preheat oven to 350 degrees F. In a large bowl, combine all ingredients well. Spread on a baking sheet topped with parchment paper. Bake 350 for 30 minutes or until golden and crunchy. Let cool completely and then store in air-tight container.
